One Pot-Crock Pot Lentil Soup 

2 cups dried red lentils rinsed and drained
8+ cups water
1 onion chopped
3 cloves of garlic
1 jalapeño chopped
2 Tbsp. curry powder
1 tsp. real salt
3-4 slices fresh ginger
1 tsp. grated fresh turmeric
1 tsp. ground black pepper
1 Tbsp. lard or coconut oil

Put everything in a 4 qt. crock pot, set on low, and wait! Stir occasionally and add more water if needed. I usually leave mine over night and it is ready for lunch. You can sauté the onions in the lard first if you wish to bring out more flavor. I did not this time due to time (and dishes). Both are equally delicious!

Wild Cress Soup

Ingredients: 3+ cups hairy bittercress 
1 ½ cup whole milk
½ cup cream
1 clove garlic
1 small onion
1 Tbsp. butter
salt + pepper

Begin by cooking your bittercress (I use the entire upper portion although some prefer just the leaves) in the butter over medium heat. Add the chopped garlic and onion and sautee until tender. Place in a blender with the milk, cream, and salt and pepper, blend, and enjoy! So good and so easy!

*If you choose to pull the whole plant because it is getting invasive, simply trim the roots and compost all yellowed leaves. I save the roots for a tincture.
